My grandfathers, uncles, and my Dad were coal miners in the western part of Virginia and southern West Virginia - hard, honest work for minimal pay. The women in our families worked equally as hard in raising children and keeping house - and making the most wonderful meals out of the simplest ingredients! I have learned from my own cooking experience that the best part of preparing something is in sharing it with others who enjoy it, too. Quick and Easy Fudge





Our cousin, Todd, shared this recipe with us.  He said that he came up with it one evening when he was craving fudge and only had these simple ingredients to make some.  And it's great!


Ingredients:

16 oz. jar Jiff Peanut Butter (USE ONLY JIFF!)
 8 oz. jar Betty Crocker ready to use vanilla frosting

 A buttered 9 x 9 baking dish.


Directions:

1. Microwave peanut butter for 2 minutes.

2. In a large bowl, combine melted peanut butter and the vanilla frosting; mix until well blended.

3. Immediately spread the mixture in the baking dish.

4. Allow to cool sightly and then cut into squares.

5. Allow to cool completely before eating.
