My grandfathers, uncles, and my Dad were coal miners in the western part of Virginia and southern West Virginia - hard, honest work for minimal pay. The women in our families worked equally as hard in raising children and keeping house - and making the most wonderful meals out of the simplest ingredients! I have learned from my own cooking experience that the best part of preparing something is in sharing it with others who enjoy it, too. Grandma's Chiffon Pie

GRANDMAW'S CHIFFON PIE    
as made by Grandma Lizzie Grubb

Ingredients:

Chill 1 can of cream in freezer (this is evaporated milk NOT sweetened condensed milk)

Combine in saucepan and boil to dissolve:
1 c. pineapple juice
1 c. sugar
1 lg. box dry jello (any flavor)


Directions:

1. In a large bowl, whip the contents of the chilled cream until it is double in volumn and soft peaks form.

2. Fold the whipped cream into cooled syrup.

3. Pour in to a vanilla wafer lined pie pan 

4. Chill until ready to serve.
